Gnocchi are a tipical Italian food; I'll show you how to prepare them.

You need about 1Kg of potatoes, you better use the old ones witch are more dry. Today I used sweet potatoes.
Wash the potatoes and put them whole (with their skin) in a big pot with water.

Let them boil for 30 - 45 minutes until the potatoes are soft enough (pinch them with a fork to know how soft they are).

While the potatoes are hot, cut them in big pieces so that you can press them with the tool you see in my hand (I don't know its name in english).
You don't need to peel the potatoes, the skin will remain in the tool.

Knead the potatoes with no less than 300 g of flour (you need much more flour if your potatoes are wet like mine) salt and one egg.
My potatoes were too sweet so I added some parmesan cheese too.
My children have a lot of fun putting their hands in the mixture but be careful: it's hot.

Make little snakes with the mixture and chomp them in little pieces. My wife and my son did it.

Cook gnocchi in boiling water for a couple of minutes; when they float are done.

You can flavour gnocchi as you like; tipical ways are:

Bolognese sauce
Melted Gorgonzola cheese
Tomato sauce and mozzarella cheese (you have to put everything in a pot and cook it in your owen)

My children prefer gnocchi with basil pesto as in the first photo.
